Successfully following a gluten-free (GF) diet involves much more than just avoiding gluten. It is about getting optimal nutrition from healthful foods. And it is not all about GF breads and cookies, it’s about eating a bounty of whole foods and incorporating healthful whole GF grains, using them in ways that maximize their nutritional benefits.
As a registered dietitian, I refer to Gluten Free Diet on a regular basis; I trust that the information is research-based, backed with science, and 100% reliable. It is the number-one resource on GF diets / GF living for myself and for my clients.
Shelley Case, a registered dietitian who herself follows the GF diet, is an international expert on celiac disease and the GF diet. After 25 years working with mesquite (Prosopis spp) as a university researcher, in cooperation with other partners, we began to produce and import mesquite flour into the USA. Very shortly after I got a call from Shelley Case with requests for information about nutritional quality. She requested scientific journal articles going back to the early 80s with all information about mesquite. She called all domestic and international suppliers for information on their products. She prepared an excel spreadsheet to look for glaring differences among the nutritional information. Following this exhaustive literature search and analyses, she summarized the work for her book. The two things that come to my mind when I think of this book are attention to detail and scholarship. One can be sure the data is all inclusive, up to date and correct.

I purchased this book for my daughter, who may be gluten intolerant. It answered ALL the questions that the local doctors were unable to. I highly recommend this to anyone who may be gluten intolerant. Great resource book!!

When I was diagnosed with Celiac in early 2006, I could not wait until the third edition of this book came out. I could not afford the $100 someone was asking for the used version – there were not any new ones and it was that sought after! I could not have made it through my first gluten-free year without Shelley’s guide. It cheered me up just looking at all the companies and bakeries that made gluten free food for us back then.
With the newest edition of Shelley’s book, there are even more great products, bakeries and websites to explore AND the ingredient infomation is accurate – no outdated 20 year old myths that are sadly still floating around on the internet. We have to work hard to avoid gluten, one should not be taking advice about the diet from anyone who is not an actual EXPERT on the subject. Shelley Case is the real McCoy!

RE: GLUTEN-FREE DIET, A Comprehensive Resource Guide by Shelley Case, B.SC. RD. Shelley Case’s book is THE BEST resource for people who need a gluten-free diet. Although there are few absolutes in terms of a gluten-free diet, registered dietitian Shelley gives us the most accurately researched information on ingredients and other details. There’s no point avoiding an ingredient that we really don’t have to worry about. You need to know about meal planning, shopping guidelines, nutrition, cross contamination, tips for eating out, GF labeling regulations, & directory of GF specialty vendors and GF products. This book should be one of the first GF reference books you buy.
